While previously seen as a non-nutrient additive to improve food texture and stability, glycerin in nutrition bars helps to control insulin spikes. Usually, when consumers eat a nutrition bar, they’re not eating any other food at the same time. Glycerin produces a low glycemic response, which keeps insulin low.
